In the early 70's a common potluck desert was a no-bake cheesecake that required cool whip and lots of it. That was back in the days before heart healthy became an in vogue term. To quote a friend this morning, "Heck, even Adidas were only just being invented."
M was out shopping so I could put whatever amounts of anything that was sweet, artery clogging, and stint creating in it.
The Crust
-1 Package of graham crackers put through the mixer's carrot grater attachment. We didn't have a box of wafer crumbs and I was too lazy to crush them with a rolling pin or beating with a hammer. After all I had just given a machine a good beating at work and was tired.
-1/3 - 1/2 cup of melted butter. I didn't measure exactly, recipes indicated at least 1/4 cup but who needs a recipe? Just look at the texture.
-1 or 2 shakes of cinnamon. Careful here. Too much can spoil the cookin'.
-Mix the above ingredients, then press into the bottom of a 9 X 12 pan. Bake at 375 for 7 minutes then set outside to cool in the snow bank.
Cream cheese filling
-8 oz. or if you are Canadian 250 grams of cream cheese warmed to room temperature
-1 pint or if you are Canadian 473 mL of 35% whipping cream
-3 T white sugar or whatever will stay on the spoon during transport. You can wipe off the counter later.
-Some vanilla
-Whip the cream, sugar and vanilla until cream has good lift and peaks that are stiff. Add the cream cheese and blend until smooth.
-Spread mixture over cooled graham cracker crust.
Cherry pie filling
-1 can of pie filling, Can appears to be a bit smaller than a quart oil can. Note to the younger folks here: you may never have seen an oil can, so just use your own judgement. Trial and error will make you smarter.
If it is just 2 of you eating this, stop eating at this amount, then crawl onto the recliner and sleep it off.

Reminds of a layered cake a coworker brought to a christmas party. It was called "Death By Chocolate", there were 7 or 9 different kinds of chocolate in itM was out shopping so I could put whatever amounts of anything that was sweet, artery clogging, and stint creating in it.

@Spike188 OMG , that is the same my mom use to make when I was a kid . Loved it ! I could literally taste it while reading what you wrote . I am glad you enjoyed it . I did just reading it . Thanks that brought back found memories .
