Varenika like my mother made years ago.

I have been playing "chase the starter" with a local repair shop. I got it back yesterday after months of waiting. That will be a thread of its own. The day before I passed 3 written exams for AZ licence (US CDL equivalent). In short it has been a week to celebrate.

Varenika, as mom's family spell it or, Varenyki as others might know it was a meal mom made once a year, if that. When I was a teenager at home, mom would freeze some for me to pack for lunch to be ate plain and cold. My last memory of her making it was well over 35 years ago. It was one of my favorites. Occasionally I will cross paths with someone that knows what it is. Then the conversation drifts into " are you a boiled or fried varenika" Mom fried ours and served with a ham gravey or maple syrup.

I found a European grocery store that stocks dry curd cottage cheese and decided to give it a go.

Maybe it was beginners luck, but they turned out picture perfect and the taste was spot on.

When I first read this I thought you were getting a license in Arizona!

This is first time I’ve heard of Varenika. Looks tasty! I like the saying at the end of the recipe!

I have heard the name in the past, from Russian people, they're like dumplings right? It is important to keep healthy traditions alive, both family traditions and ethnic traditions. I'll try this recipe, thank you for sharing Eugene! :thumbsup:
