@DavidBarkey its the cut. Pork steaks come from the shoulder. They tend to have more fat content but they are tasty! Pork chops are cut from the loin.

Chops come from off the loin, the pork steaks are cut from the front shoulder. They are darker meat then chops and have fat divisions running through them. Not as lean as a chop but great distinct flavor. They're still pretty reasonably priced. I had posted some on the grill a couple of weeks ago. @JSinMO The only things shoulder high here are the older grand-kids , corn and weeds .
We have pork chops here not steaks , not sure what is the difference .

So glad to see we're not the only ones who like the pork steak. We get the whole pork shoulder and cut the steaks as we like. Not a great fan of all the fat, but much of it gets trimmed, and what's left gives good taste.

I don't normally shed a tear when having to butcher stuff . But those onions had to go . It did bring a tear to my eye while doing the dirty deed .
