Potato Soup

Post by Vivala446 »

I know winter is slowly working it's away towards gone, but everyone here has been so helpful to me that since I can't actually cook for anyone, I'd at least put one of my secret recipes out there.

You will need:
3-5 baking potatoes peeled and chunked up
1 onion, chopped
1-2 packages country ham, cut up in bitesize pieces
1 stick butter
1 tablespoon bacon grease
1/2 teaspoons mustard powder
1/2 teaspoon minced garlic
1 teaspoon powdered chicken broth
2 quarts heavy gream
salt and pepper to taste

Combine all ingredients except butter in a large pot. Stir to mix and set on medium heat. Just before it starts to boil, turn heat down to simmer and add butter. Let it simmer covered until potatoes are tender. Smash and few of them against the inside of the pot to release the starch and then stir them into the soup. Let cook for 10 more minutes and serve.

I'm not sure if the picture came through... But it's a salt cured ham we have here in the American south. It usually comes at the store packaged in whole slices or cut up in either season pieces or biscuit sized pieces.

That sound real tasty. I may have to make that. But I’d have to use city ham. I’ll have to look for that Country ham. Kinda looks like thick slice bacon.

Noel,
it's ham, not bacon, so it's not smoked; although I don't think it would ruin the taste either. Italian prosciutto is similar to this country ham. :122:

I’ve had potatoe and bacon soup before it’s tasty. I’m sure any ham would work.

You can use just about whatever meat you want. We've even added smoked fish to it right at the end. It really just depends on what you want to use

Thanks for the recipe. :122: I was thinking about tater soup recently and will give yours a go. We've got plenty of winter left here and love those good ole sticks to your ribs meals.
